- 2 cups organic cornmeal
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 1 tablespoon honey (local)
- 1 tablespoon cold-pressed extra virgin olive oil
- 1 large egg
- 1 cup low fat buttermilk
- Dash of hot sauce (optional)
- Non-stick cooking spray (olive oil)
Preheat oven to 375 degrees Fahrenheit. Lightly coat a 8-inch by 8-inch baking pan with non-stick cooking spray. In a large bowl, combine the dry ingredients (first four ingredients). Then add the remaining ingredients and stir to combine but do not over mix. Pour the mixture into the baking pan. Bake for 25-30 minutes or until top turns golden. Serves 12.
