Craving a flourless gluten-free cookie with heart-healthy fat that will also please holiday guests? Avocado is the star ingredient in this nutritious and delicious healthy holiday cookie recipe!
Ingredients (use organic ingredients when available):
- 1/3 cup medium ripe avocado, mashed
- 2/3 cup natural peanut or almond butter
- 1/2 cup unsweetened applesauce
- 1 large egg, lightly whisked
- 2 Tablespoons maple syrup
- 3/4 cup quich-cooking oats
- 1/2 teaspoon baking powder
- 1/4 cup cocoa nibs, roasted
- Non-stick cooking spray
Instructions:
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius). Prepare a large baking sheet with non-stick cooking spray. In a medium-size mixing bowl, combine first five ingredients (wet ingredients). In a large-size mixing bowl, combine the next three dry ingredients. Fold the wet ingredients into the dry ingredients just until well-combined. Stir in cocoa nibs. Using a tablespoon, evenly scoop onto baking sheet to make 12 cookies. Flatten slightly with a fork.
Bake for about 12 to 15 minutes.

Note that these cookies are low in *sugar (less than a teaspoon per cookie). If you like sweet cookies, then add an extra tablespoon of maple syrup to the batter.
