Independence Day Berry Parfait

On July 4, 1776, the Continental Congress approved the Declaration of Independence, setting the 13 colonies on the road to freedom as a sovereign nation. As always, this most American of holidays will be marked with red, white and blue flags, fireworks, parades, and backyard barbecues across the country.

Here is a yummy and healthy recipe to help celebrate Independence Day:

Berry Parfait Recipe, Makes 2

Choose organic ingredients when available:

  • 1/2 cup low fat vanilla yogurt
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 2 tablespoons instant oatmeal
  • 1/2 cup fresh or frozen cherries
  • whipped cream

Using two clean parfait or wine glasses, in each, carefully layer: 2 tablespoons of yogurt, 1/4 cup raspberries, 1/4 cup blueberries, one tablespoon oatmeal, 2 tablespoons yogurt and 1/4 cup cherries. Finish with a swirl of whipped cream and a cherry on top.

Serves 2

Nutrition Facts per serving: 222 calories, 5.8 grams fat, 51 milligrams sodium, 264 milligrams potassium,39.7 grams carbohydrates, 3.7 grams dietary fiber, 14 grams sugar, excellent source of vitamin C and good source of calcium.
