Traditionally Italian Piccata is made with chicken or veal. This healthy recipe calls for chicken cutlets or chicken tenders, which cook quickly-about 6 minutes! The recipe can also be used with mild fish like Dover sole, scallops or even shrimp. Mushrooms contain selenium, a trace mineral that helps strengthen the immune system.
